Grocery List

  • Cooking spray
  • 4 (6 ounce) skinless, boneless chicken breast halves
  • 3/4 teaspoon ground cumin, divided
  • 1/4 teaspoon salt
  • 1 (10 ounce) can mild diced tomatoes and green chilies, undrained
  • 3/4 cup shredded Mexican blend cheese
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Preheat the broiler.
  2. Heat a large ovenproof skillet over medium-high heat and coat with cooking spray. Sprinkle each side of the chicken with 1/2 teaspoon cumin and salt; cook for 6 minutes on each side or until done. Remove chicken from the pan and keep warm.
  3. Add 1/4 teaspoon cumin and tomatoes to the pan; cook for 1 minute. Return chicken to the pan and spoon the tomato mixture evenly over the chicken. Sprinkle cheese on top and broil for 2 minutes or until cheese melts. Garnish with cilantro.

2. Linguine with Clam Sauce

  • 1 (16 ounce) package of linguine
  • 1/2 cup butter
  • 3 cloves chopped garlic
  • 1 lb fresh mushrooms, sliced

Directions

  • 1 cup milk
  • 1 1/2 cups shredded Cheddar cheese (plus more for sprinkling)
  • (Optional) Crushed red pepper, Panko breadcrumbs for topping
  • (Optional) Salsa, hot sauce, sour cream, scallions for topping

Directions

  1. Lightly sauté veggies with garlic and a pinch of salt.
  2. Cook quinoa according to package instructions (usually 1 cup water to 1/2 cup quinoa, boiled for 15 minutes).
  3. Preheat the oven to 350°F. Coat a 13x9 inch dish with cooking spray. Mix sautéed veggies into the cooked quinoa and add a pinch more salt.
  4. In a large bowl, whisk together eggs and milk. Fold in the egg mixture and cheese into the quinoa and veggies. Stir well and transfer to the prepared baking dish. If using, sprinkle Panko breadcrumbs on top.
  5. Bake for 30-35 minutes, until breadcrumbs are browned.
