With so many social gatherings, it's essential to have a handful of secret potluck recipes to impress your guests. Whether you're attending a family gathering or a potluck at your favorite Sun RV resort, these dishes will help you shine.

Delicious Potluck Recipes for Every Occasion

To simplify your hosting duties, we've gathered three simple potluck recipes: a main dish, a side, and a dessert. These recipes are perfect any time of year and will make you the star of your next event!

Main Dish: Tex-Mex BBQ Brisket Sandwiches

Servings: 14
Ingredients:

  • 1 fresh beef brisket (3-1/2 pounds)
  • 1 jar (18 ounces) hickory smoke flavored barbecue sauce
  • ½ cup finely chopped onion
  • 1 packet chili seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon lemon juice
  • 14 hamburger buns, split

Instructions:

  1. Cut brisket in half and place in a 5-quart slow cooker.
  2. In a small bowl, combine barbecue sauce, onion, chili seasoning, Worcestershire sauce, garlic, and lemon juice. Pour over beef.
  3. Cover and cook on high for 5-6 hours or until the meat is tender.
  4. Remove beef, cool slightly, shred it, and return to the slow cooker to heat through. Serve on buns.

Side Dish: Crowd-Pleasing Taco Salad

Servings: 10
Ingredients:

  • 1 pound ground beef
  • ½ cup ketchup
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 medium head iceberg lettuce, torn
  • 2 medium tomatoes, diced
  • 1 cup (4 ounces) shredded Mexican cheese blend
  • 1 can (2-1/4 ounces) sliced ripe olives, drained
  • ½ cup mayonnaise
  • ¼ cup taco sauce
  • 1 package (10-1/2 ounces) corn chips

Instructions:

  1. In a large saucepan, cook beef over medium heat until no longer pink; drain.
  2. Stir in ketchup, oregano, chili powder, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes.
  3. In a large bowl, combine lettuce, tomatoes, cheese, olives, and beef mixture.
  4. Mix mayonnaise and taco sauce; pour over salad and toss to coat. Sprinkle with corn chips and serve immediately.

Dessert: Potluck Banana Cake

Servings: 12-15
Ingredients: For the Cake:

  • ½ cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 1-1/2 cups mashed ripe bananas (about 3 medium)
  • 1 cup (8 ounces) sour cream

For the Coffee Frosting:

  • 1/3 cup butter, softened
  • 2-1/2 cups confectioners' sugar
  • 2 teaspoons instant coffee granules
  • 2 to 3 tablespoons milk

Instructions:

  1. In a large bowl, cream butter and sugar until light and fluffy.
  2. Add eggs one at a time, beating well after each addition. Stir in vanilla.
  3. Combine flour, baking soda, and salt; add alternately with bananas and sour cream, beating well.
  4. Pour into a greased 13-inch x 9-inch baking dish. Bake at 350°F for 35-40 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  5. For the frosting, beat butter and confectioners' sugar until smooth, then mix in coffee granules and milk to achieve desired consistency.
