3 Easy Takeout Alternatives for RVers

Rainy day? Trying to eat healthier? Or perhaps there's just no takeout place nearby? As an RVer, great takeout isn't always easy to find. But don't worry! You can create your own "better than takeout" meals right in your RV. These recipes are easy to make and will satisfy your cravings while giving you control over the ingredients.

Beef and Broccoli Better Than Takeout Recipe

1. Better Than Takeout Beef and Broccoli

Chinese restaurants dominate the carryout scene, but many fan favorites are simple to replicate at home. With this beef and broccoli recipe, you can customize the spice level and control the sodium content.

Ingredients:

  • 2 pounds boneless beef chuck roast, sliced into thin pieces
  • 1 cup beef broth
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 4 tablespoons cornstarch
  • 1/4 cup water
  • 1 head broccoli, cut into pieces
  • Cooked white rice, for serving

Method:

  1. In a crockpot, whisk together the beef broth, soy sauce, sesame oil, garlic, and brown sugar.
  2. Toss the sliced beef in the liquid until well coated.
  3. Cover and cook on low heat for 4 hours.
  4. In a small bowl, whisk the cornstarch and water together. Pour into the crockpot, add broccoli, and stir.
  5. Cover and cook for an additional 30 minutes until broccoli is tender and sauce thickens.
  6. Serve over white rice.
Burrito Bowl

2. Versatile Burrito Bowls

Burrito bowls are less about a strict recipe and more about using what you have on hand. They're perfect for RVers looking for quick, customizable meals.

Ingredients:

  • Cooked white or brown rice (try flavoring it with lime and cilantro)
  • Black or pinto beans
  • Choice of protein (chicken, ground beef, chorizo, tofu, etc.)
  • Salsa
  • Sour cream
  • Lettuce
  • Diced tomato
  • Guacamole or diced avocado
  • Shredded Monterey Jack cheese
  • Any other favorite toppings

Method:

  1. Start with a base of rice, then layer on black beans, your choice of protein, salsa, and cheese.
  2. Top with any other desired toppings. Enjoy!
Chicken Tikka Masala

3. Creamy Chicken Tikka Masala

Indian dishes are delicious, and chicken tikka masala is surprisingly easy to prepare in your RV. This recipe features warm spices in a creamy sauce, perfect for a comforting meal.

Ingredients:

  • 1 ½ pounds chicken breast or thighs, cut into 1-inch cubes
  • ½ cup Greek yogurt
  • 5 tablespoons garam masala, divided
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 4 tablespoons butter, divided
  • 1 onion, diced
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 14 ½ ounces crushed or pureed tomatoes
  • ¼ teaspoon cayenne pepper
  • ½ cup heavy cream or coconut milk
  • Naan bread or white rice, for serving

Method:

  1. Marinate the chicken in Greek yogurt, ½ teaspoon garam masala, salt, and black pepper for at least 20 minutes (preferably overnight).
  2. Heat 2 tablespoons butter in a large skillet over medium-high heat. Brown the chicken on both sides, about 2-3 minutes per side.
  3. Remove the chicken and set aside.
  4. In the same skillet, add the remaining butter and sauté the onion until soft, about 5 minutes.
  5. Stir in the remaining garam masala and cayenne pepper; sauté until fragrant.
  6. Add garlic and ginger, and sauté for about 1 minute.
  7. Pour in crushed tomatoes, return the chicken to the skillet, and simmer for about 15 minutes until cooked through.
  8. Stir in heavy cream, adjust seasoning, and serve warm with rice or naan.
