Essential Tools for Campfire Cooking

To make this delicious campfire rotisserie chicken, you'll need a campfire rotisserie. You can either buy one or create your own DIY version. Consider options like an electric rotating campfire rotisserie or a manual grill rotisserie.

Important Cooking Tips:

  • Brining: This recipe requires an overnight brine, so plan ahead!
  • Cooking Time: Expect a cooking time of 4-8 hours.
  • Fire Setup: Keep the chicken 24-30 inches above the fire to ensure even cooking without burning.
  • Active Cooking: This method requires your attention; you can't leave the chicken unattended.
  • Temperature Check: Use a digital thermometer to ensure the chicken reaches an internal temperature of 165°F for safety.

Ingredients for Campfire Rotisserie Chicken

Chicken and Brine Ingredients:

  • 1 whole chicken
  • ½ cup sugar
  • ½ cup salt
  • Water (enough to cover the chicken)

Dousing Sauce Ingredients:

  • 2 cups apple cider vinegar
  • ¼ cup brown sugar
  • 1 teaspoon white pepper
  • 2 cups water or beer
  • (Optional) BBQ sauce, for serving

How to Make Campfire Rotisserie Chicken

Step 1: Brine Your Chicken

  1. Place the whole chicken in a large stock pot.
  2. Add salt and sugar, then fill the pot with water to cover the chicken.
  3. Stir gently to dissolve the salt and sugar, then refrigerate for at least four hours.

Step 2: Start Your Campfire

  1. Allow the fire to burn down until you have a bed of hot coals with slightly lower flames.

Step 3: Prepare the Chicken

  1. Truss your chicken using cooking twine (here's a handy tutorial).
  2. Skewer the chicken on the rotisserie spit over the campfire.

Step 4: Apply Dousing Sauce

  1. Combine all dousing sauce ingredients (except optional BBQ sauce) in a squirt bottle.
  2. Douse the chicken with about 1/5 of the sauce.

Step 5: Cooking Process

  1. Rotate the spit every 20-30 minutes (10-15 minutes for very hot fires).
  2. Keep the fire hot and apply more dousing sauce once an hour.
  3. Cook the chicken for 4-8 hours until the thickest part reaches 165°F.

Step 6: Rest and Serve

  1. Let the chicken rest for 10-20 minutes before carving.
