Easter Biscuits

Side Dishes

Easy Southern Buttermilk Biscuits

Whether you're serving them with butter, jam, honey, or another spread, these easy biscuits are sure to be a hit. Bonus: any leftover biscuits make a great breakfast alternative to toast.

Ingredients:

  • 3 ½ cups all-purpose flour
  • 1 ½ tablespoons baking powder
  • ¾ teaspoons baking soda
  • 1 ½ tablespoons sugar
  • ¾ teaspoons salt
  • 6 tablespoons butter
  • 2 cups buttermilk
  • 2 tablespoons melted butter

Directions:

  1. Preheat oven to 500°F. Grease a 9-inch square baking pan and a 1/3-cup measuring cup. Flour your baking sheet to prevent sticking.
  2. In a food processor, pulse three cups of flour, baking powder, baking soda, sugar, and salt. Add butter and pulse again to form coarse crumbs; transfer to a bowl.
  3. Stir buttermilk into the flour mixture until just combined. Scoop 9 heaping cups of dough onto the floured baking sheet and arrange them in three rows of three.
  4. Brush the tops with melted butter and bake for 5 minutes. Then reset the oven to 450°F and bake for an additional 15-20 minutes until golden. Serve warm.

Apricot-Glazed Green Beans

This recipe requires very little work but produces a gourmet result. Plus, it's important to include some vegetables along with all of your sweets.

Ingredients:

  • 2 pounds green beans
  • 6 slices bacon
  • ¼ cup olive oil
  • 4 cloves garlic
  • ¼ cup apricot jam
  • 3 tablespoons white wine vinegar

Directions:

  1. Bring a large pot of water to a boil. Add salt, then the green beans. Cook until just tender, about 3-4 minutes. Drain and run under cold water.
  2. Cook the bacon in a medium skillet over medium heat until crisp. Transfer to a plate lined with paper towel and let cool before breaking into pieces.
  3. In the same skillet, heat olive oil over medium heat. Add garlic and cook until it begins to brown.
  4. Stir in jam, vinegar, and salt and pepper. Add the green beans and toss to coat. Fold in the bacon.
