Easy Southern Buttermilk Biscuits
Whether you're serving them with butter, jam, honey, or another spread, these easy biscuits are sure to be a hit. Bonus: any leftover biscuits make a great breakfast alternative to toast.
Ingredients:
- 3 ½ cups all-purpose flour
- 1 ½ tablespoons baking powder
- ¾ teaspoons baking soda
- 1 ½ tablespoons sugar
- ¾ teaspoons salt
- 6 tablespoons butter
- 2 cups buttermilk
- 2 tablespoons melted butter
Directions:
- Preheat oven to 500°F. Grease a 9-inch square baking pan and a 1/3-cup measuring cup. Flour your baking sheet to prevent sticking.
- In a food processor, pulse three cups of flour, baking powder, baking soda, sugar, and salt. Add butter and pulse again to form coarse crumbs; transfer to a bowl.
- Stir buttermilk into the flour mixture until just combined. Scoop 9 heaping cups of dough onto the floured baking sheet and arrange them in three rows of three.
- Brush the tops with melted butter and bake for 5 minutes. Then reset the oven to 450°F and bake for an additional 15-20 minutes until golden. Serve warm.
Apricot-Glazed Green Beans
This recipe requires very little work but produces a gourmet result. Plus, it's important to include some vegetables along with all of your sweets.
Ingredients:
- 2 pounds green beans
- 6 slices bacon
- ¼ cup olive oil
- 4 cloves garlic
- ¼ cup apricot jam
- 3 tablespoons white wine vinegar
Directions:
- Bring a large pot of water to a boil. Add salt, then the green beans. Cook until just tender, about 3-4 minutes. Drain and run under cold water.
- Cook the bacon in a medium skillet over medium heat until crisp. Transfer to a plate lined with paper towel and let cool before breaking into pieces.
- In the same skillet, heat olive oil over medium heat. Add garlic and cook until it begins to brown.
- Stir in jam, vinegar, and salt and pepper. Add the green beans and toss to coat. Fold in the bacon.
Sweet Treats
Easter Bird Nests
Relive nostalgic Easter holidays by making these delicious Easter bird nests for your family.
Ingredients:
- 2 cups small marshmallows
- ¼ cup butter
- 4 cups chow mein noodles
- Candy to fill the nests, such as M&M's, Jelly Beans, or Whoppers
Directions:
- Coat a muffin pan with cooking spray.
- Melt butter in a large microwave-safe bowl. Add marshmallows and microwave for 45 seconds. Stir and microwave for an additional 45 seconds.
- Stir in chow mein noodles until coated. Spoon the mixture into each cup of the muffin pan and form nests with your hands.
- Freeze nests for one hour. Pop each nest out and fill with candy.
Easter Rice Krispie Treats™
Turn your favorite childhood snack into a pastel Easter treat. With a couple of seasonal substitutions, this becomes a great finger food dessert.
Ingredients:
- 10 ounces mini marshmallows (4 cups)
- 3 tablespoons butter
- 5 cups Rice Krispies cereal
- 1 cup mini marshmallows
- ¼ cup pastel sprinkles
- 1 cup pastel M&M's
Directions:
- Coat a 9x13 pan with butter or cooking spray.
- Melt butter in a saucepan, then add marshmallows and stir until melted.
- Stir in the cereal and let cool for 2-3 minutes. Add the additional marshmallows, sprinkles, and M&M's.
- Spoon the mixture into the prepared pan and press down gently. Let cool for at least 30 minutes before cutting into squares.
Peeps S'mores
Bridge the gap between spring and summer with these colorful Peeps s'mores.
Ingredients:
- Peeps, any color
- Graham crackers
- Milk chocolate bars
Directions:
Campfire Method:
- Skewer a Peeps and hold it over low heat until warm and gooey.
- Place chocolate on half a graham cracker, add melted Peeps, and top with another graham cracker.
Oven Method:
- Place graham cracker halves on a baking sheet. Top with Peeps and chocolate squares.
- Broil on low for 2-3 minutes until gooey.
