No-Bake Double Layer Pumpkin Pie
You can't have a fall recipe list without pumpkin! This no-bake pumpkin pie is an easy way to satisfy your sweet tooth without the hassle of baking. Indulge in a delightful cheesecake layer that comes together in seconds.
Ingredients
- 6 ounces cream cheese, softened
- 1 cup + 2 tablespoons milk
- 2 tablespoons sugar
- 2 cups whipped topping
- 1 prepared shortbread or graham cracker crust
- 2 small boxes instant vanilla pudding
- 15 ounces pumpkin puree
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- ¼ teaspoon clove
Directions
- In a small mixing bowl, combine cream cheese, 2 tablespoons of milk, and sugar. Mix until smooth.
- Fold in whipped topping and spread evenly into the bottom of the crust.
- In a large bowl, combine the vanilla pudding mix, 1 cup of milk, pumpkin, and spices. Whisk until smooth.
- Carefully spread the pumpkin mixture over the cream cheese layer.
- Refrigerate for 2-3 hours before serving.
Camping Mac ‘n' Cheese
The king of comfort food, mac ‘n' cheese, gets a fun twist in this campfire version. Use a regular pie pan for a family-style dish, or try mini pie pans to allow everyone to customize their servings. Add campfire bacon for a crispy mix-in!
Ingredients
- 1 ½ cups elbow macaroni
- 8 ounces prepared alfredo sauce
- ½ cup grated sharp cheddar cheese
- ½ cup grated Parmesan cheese
- ¼ cup mozzarella cheese
- ¼-½ cup half and half or milk
- Salt and pepper, to taste
Directions
- Cook pasta according to package directions. Drain and rinse with cold water.
- Stir cheese and Alfredo sauce into the cooked pasta. Add milk if the sauce is too thick. Season with salt and pepper.
- Spray aluminum mini pie tins with nonstick cooking spray and divide the pasta between them (or use a large pie tin).
- Cover each tin with nonstick-sprayed aluminum foil, sealing well.
- Place the tins over hot coals and cook for 8-10 minutes or until heated through.
Campfire Skillet Cornbread
What goes better with chili than a big batch of cornbread? This recipe is simple, tasty, and perfect for cooking over the campfire. Remember to keep your fire at medium-low heat to prevent burning the bottom.
Ingredients
- 1 cup cornmeal, preferably medium grind
- ½ cup all-purpose flour
- 1 tablespoon baking powder
- 2 teaspoons salt
- 1 cup milk
- 1 egg
- 2 tablespoons honey
- ½ tablespoon oil
Directions
- In a large bowl, mix cornmeal, flour, baking powder, and salt.
- Add milk, egg, and honey to the dry ingredients and mix until fully incorporated.
- Heat oil in a cast iron skillet over the campfire. Pour the batter in an even layer.
- Cover the skillet with a lid or aluminum foil and cook over medium-low heat for 15 minutes.
- Let rest (still covered) for an additional 5 minutes. Cut into slices and serve with chili.
Slow Cooker Chicken Taco Chili

Ingredients
- 16 ounces black beans, drained
- 16 ounces kidney beans, drained
- 2 garlic cloves, minced
- 1 medium onion, chopped
- 1 jalapeno pepper, minced
- 1 green bell pepper, chopped
- 10 ounces frozen corn kernels
- 8-ounce can tomato sauce
- 28-ounce can diced tomatoes, drained
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1 tablespoon dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 2 boneless, skinless chicken breasts, uncooked
Directions
- Combine all ingredients except chicken in a slow cooker. Stir until combined.
- Place uncooked chicken on top and cover. Cook on low for 6 hours or high for 4 hours, stirring occasionally.
- Thirty minutes before serving, shred chicken with two forks, stir, and continue cooking.
Baked Apples
A staple fruit of fall, baked apples are a sweet, spicy, and easy dessert for the campfire. Pair with vanilla ice cream for an extra treat!
Ingredients
- ½ cup brown sugar
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- Pinch salt
- ½ cup raisins
- ½ cup shredded coconut
- 4 teaspoons maple syrup
- 4 tart apples
Directions
- Mix all ingredients (except syrup and apples) in a bowl. Core the apples.
- Fill each apple halfway with the spice mixture. Add one teaspoon of syrup and top with more spice mix.
- Wrap each apple in foil and bury them in warm campfire coals for about 20 minutes or until soft.
Foil Pack Potato Boat Dinner
Foil packs make cooking with campfires easy, and this recipe brings your favorite loaded baked potato to the great outdoors.
Ingredients
- Large baked potatoes
- Sliced ham
- Cooked bacon slices
- Cheese slices
- Butter
- Sour cream, for topping
- Green onion, for topping
Directions
- Bake potatoes and slice the tops without cutting through.
- Stuff each cut with cheese, bacon, and ham. Add a dab of butter on top.
- Wrap in a double layer of aluminum foil and place on hot coals for about 20 minutes.
- Top with sour cream and green onion before serving.
