Healthy RV Recipes for Life on the Road

Full-time RVing doesn't mean you have to eat out all the time. In fact, preparing your own meals can save you money and help you eat healthier. Read on to discover your new favorite healthy RV recipes!

1. Hummus and Avocado Wraps

Fresh and Nutritious

Simple, fresh, and full of veggies, these hummus and avocado wraps are perfect for a quick meal while RVing. You can even make them in advance for a picnic lunch on day trips!

Grocery List (per wrap):

  • 3 tablespoons hummus
  • ½ avocado
  • Leafy greens
  • ½ tomato, sliced
  • 1 teaspoon to 1 tablespoon minced garlic
  • Salt and pepper
  • Tortilla, wrap, or flatbread

How It's Done

  1. Spread hummus over a tortilla and sprinkle with garlic, salt, and pepper.
  2. Layer leafy greens, avocado, and tomato slices.
  3. Roll or fold the wrap and enjoy!

2. Whole Wheat Banana Pancakes

A Hearty Breakfast

These whole wheat banana pancakes are nourishing and perfect for a Saturday morning breakfast. Top with maple syrup or fresh fruit for a delightful meal.

Grocery List:

  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 tablespoon honey
  • 2 eggs, lightly beaten
  • 1 ¾ cups milk (or almond milk)
  • 2 tablespoons melted butter
  • 2 bananas, mashed

How It's Done

  1. Whisk dry ingredients together in a bowl.
  2. Make a well in the center and add wet ingredients. Mix until just combined.
  3. Fold in mashed bananas and cook on a greased griddle until golden brown. Serve with maple syrup.

3. Black Bean Soup

This black bean soup is hearty and filled with hunger-fighting protein and fiber. Serve with tortilla chips and toppings for a delicious RV meal.

Grocery List:

  • 4 cans black beans (or 6 cups cooked)
  • 1 cup water
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ¼ cup fresh cilantro
  • Juice of 1 lime
  • Optional: cayenne pepper

How It's Done

  1. Blend beans with water until chunky.
  2. Sauté onion and garlic in olive oil until translucent.
  3. Add bean mixture, chili powder, cilantro, lime juice, and simmer until hot.

4. Yogurt Parfaits

Sweet and Healthy Treat

Yogurt parfaits are perfect for breakfast or dessert. Using Greek yogurt adds extra protein and thickness.

Grocery List:

  • 3 cups vanilla nonfat yogurt
  • 1 cup strawberries (fresh or frozen)
  • 1 pint mixed berries
  • 1 cup granola

How It's Done

  1. Combine strawberries with other berries.
  2. Layer yogurt, fruit, and granola in tall glasses.

5. Sweet Chili Chicken Stir Fry

This sweet chili chicken stir fry is an easy RV meal. Customize it by substituting chicken for beef, pork, or tofu, and add your favorite veggies!

Grocery List:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon cooking oil
  • 1 cup sweet chili sauce
  • 8 oz can pineapple tidbits
  • 1 pound broccoli
  • Cooked rice for serving

How It's Done

  1. Cook rice as directed.
  2. Steam broccoli until tender.
  3. Sauté diced chicken in oil until cooked. Add pineapple and sweet chili sauce.
  4. Serve with rice and broccoli.
