Every camper needs a selection of easy RV meals for busy nights and long days. It's not hard to get tuckered out after all those activities!
To help you out, we've compiled a list of four one-pot dinner and dessert recipes. One-pot meals are perfect for RV cooking because they create less less mess and require only simple ingredients.

Four One-Pot Camping Recipes
1. Chicken Alfredo
Creamy and comforting, chicken alfredo is ideal for a relaxing weeknight. If you're looking to add some vegetables, stir in a couple handfuls of spinach after the pasta is cooked. Or break the one-pot rule and steam some broccoli to serve on top.

Grocery List
- 2 tablespoons extra-virgin olive oil
- 2 boneless skinless chicken breasts
- 1 ½ cups whole milk
- 1 ½ cups chicken broth
- 2 cloves garlic, minced
- 8 ounces fettucine
- ½ cup heavy cream
- 1 cup freshly grated parmesan (pre-grated won't melt properly)
- (Optional) Freshly chopped parsley, for garnish
How It's Done - Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper and add it to the hot skillet. Cook chicken about 8 minutes per side until it's cooked through and golden brown. Let chicken rest about 10 minutes, then slice the meat into strips and set aside.
- Next, add milk, broth, and garlic to skillet. Season with salt and pepper and heat the mixture until it's simmering.
- Add fettuccine to the simmering mixture, stirring frequently for about three minutes. Let the pasta cook about 8 minutes until it's al dente.
- Stir in heavy cream and Parmesan until combined. Simmer lightly until sauce thickens.
- Remove skillet from heat and stir in sliced chicken. Garnish with parsley if desired.
2. Sloppy Joes
If you're on the hunt for a crowd-pleasing easy RV meal, sloppy joes are the answer. This is a basic recipe, but you can customize it to match your family's traditional taste.

Grocery List
- 1 pound ground beef
- 2 tablespoons yellow mustard
- ¾ cup ketchup
- 2 tablespoons brown sugar
- ½ onion, diced
- Hamburger buns, for serving
How It's Done - In a saucepan or skillet, cook the ground beef and onion together, adding salt and pepper to taste.
- Once the meat is cooked through, add the mustard, ketchup, and brown sugar. Stir all ingredients together and taste. Add salt, pepper, ketchup, and mustard as needed.
- Allow the mixture to lightly simmer for about five minutes to thicken the sauce.
- Serve on hamburger buns.
3. Chicken Chow Mein
Skip the takeout and enjoy your favorite Chinese food while camping. Chicken chow mein is an easy RV meal and this one-pot version makes it simple as can be. Use frozen veggies to save even more time!

Grocery List
- 1 tablespoon canola oil
- 2 boneless skinless chicken breasts, cut into equal size cubes
- 1 red pepper, diced
- 1 cup stringless snap peas
- 1 ½ cups shredded cabbage or coleslaw mix
- 1 large carrot, peeled and cut into thin matchsticks
- 4 cloves garlic, minced
- ½ teaspoon fresh ginger, minced
- Crushed red pepper flakes, to taste
- 4 cups chicken broth
- ½ cup soy sauce
- ¼ cup hoisin sauce
- 16 oz spaghetti
How It's Done - Heat oil in a large pot over medium-high heat, then add chicken and cook until mostly browned.
- Next, add pepper, peas, cabbage, and carrot. Cook the veggies until they are slightly softened, about 2-3 minutes.
- Then, add garlic, ginger, and pepper flakes and cook for about one minute.
- Finally, stir in broth, soy sauce, and hoisin sauce and bring to a boil over medium-high heat. Add pasta and reduce heat to medium.
- Cook the pasta for about five minutes, stirring frequently until pasta is separated and most of the liquid has been absorbed. Cover and cook for 3-4 more minutes until pasta is fully cooked.
4. Dutch Oven Apple Cobbler
Dinner isn't complete without dessert. This apple cobbler is gluten-free and pairs beautifully with a scoop of vanilla ice cream. Use it to impress your friends and family members on a summer evening. Tip: the topping can be made ahead of time and stored in a fridge or cooler.

Grocery List (Toppings)
- ¼ cup almond meal
- ¾ cup gluten-free all-purpose flour
- 2 tablespoons brown sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1/3 cup milk
- ¼ cup butter, chilled and cut into ¼ inch cubes
Grocery List (Filling) - 6-8 medium apples
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- (Optional) 2 tablespoons bourbon or rum
How It's Done - Preheat your RV oven to 400 degrees Fahrenheit.
- Combine the dry topping ingredients in a mixing bowl. Add the milk and butter. Using a fork, mix until a crumbly dough forms, cutting the butter into the mix to form small pebble sized balls of butter and dough. Set in refrigerator or cooler to keep cool.
- To make the filling, core the apples and cut into bite sized (1/2 inch) pieces. Heat a 4 quart (10-inch) Dutch oven over medium heat. Add the apples, brown sugar, cinnamon, nutmeg, and bourbon to the Dutch oven and cook briefly until the sugar has dissolved. Remove from heat.
- Crumble the topping over the apple filling in an even layer. Set the lid on the Dutch oven.
- Place the Dutch oven in your RV oven. Bake for about 20 minutes, until the topping is golden brown.
