3 Easy Winter Soup Recipes for RVing

A soft blanket, a good book, and a warm bowl of soup are perfect companions during the winter months. However, cooking while RVing can be challenging, especially with complex recipes. To make your life easier, we've compiled three simple winter soup recipes that are perfect for your RV kitchen. Bundle up, turn on some music, and get cooking!

1. White Chicken Chili

There's no winter soup cozier than chili! This white chicken chili offers a delicious twist on the traditional red chili, featuring a lighter broth and unique flavors.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, chopped
  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 28 ounces chicken broth
  • 4 ounces chopped green chilies
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 ½ teaspoons cayenne pepper
  • 3 cans (14 ½ ounces each) great northern beans, drained, divided
  • (Optional) Shredded Monterey Jack cheese, for serving

Method:

  1. In a large pot over medium heat, cook the chicken and onion in oil until lightly browned. Add garlic and cook for one more minute.
  2. Stir in the broth, chilies, cumin, oregano, and cayenne; bring to a boil.
  3. Reduce heat to low. With a potato masher, mash one can of beans until smooth and add to the pot. Add the remaining beans.
  4. Simmer for 20-30 minutes until the chicken is no longer pink and the onion is tender.
  5. Serve garnished with shredded cheese.

2. Quick Beef Stew

This beef stew is a winter classic, and this quick version ensures you can enjoy it in just 30 minutes—perfect for RV cooking!

Ingredients:

  • 2 pounds beef sirloin steak, cut into 1-inch cubes
  • 3 tablespoons flour
  • 2 tablespoons vegetable oil, divided
  • 1 package beef stew seasoning mix
  • 3 cups water
  • 5 cups frozen stew vegetables (potatoes, carrots, celery)

Method:

  1. Coat the beef with flour. Heat 1 tablespoon of oil in a large skillet or Dutch oven over medium-high heat. Brown half of the beef on all sides, then repeat with the remaining beef, adding the second tablespoon of oil.
  2. Return all beef to the skillet. Stir in the seasoning mix and water, then add vegetables. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes or until vegetables are tender.

3. Easy Black Bean Soup

This black bean soup is a nutritious, vegetarian option that's simple to make, even in an RV.

Ingredients:

  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 2 stalks celery, chopped
  • 2 medium carrots, grated
  • 1 pound dry black beans
  • 1 cup salsa
  • 1 tablespoon chili powder
  • ½ tablespoon cumin
  • 1 teaspoon oregano
  • 4 cups vegetable broth
  • 2 cups water

Method:

  1. Rinse the black beans in a colander under cool running water and pick out any debris.
  2. In a 5-7 quart slow cooker, combine garlic, onion, celery, carrots, black beans, salsa, chili powder, cumin, oregano, vegetable broth, and water. Stir well.
  3. Place the lid on the slow cooker and cook on high for 6-8 hours. Once the beans are very soft, use an immersion blender to blend the soup until thick and creamy. Add salt to taste if needed.
